IN HIS OWN WORDS
I attribute my success to being stubborn and persistent. When somebody tells me no we're not interested that's when the job really starts. I've worked hard to promote myself as an ethical professional honest person and if I say I'm going to do something I do it.
Do what you love doing. Older chefs told me if this is what you want to do and this is what you love to do understanding that this profession takes a lot of time and dedication you need to be the best you can at it. I've strived throughout my whole career to be very knowledgeable about my products and answer any question that anybody has.
First of all I would tell them good luck. I would explain to them the good the bad and the ugly and I would tell them to do the same thing I did. Always look for the next opportunity. Master the opportunity that you have right now in front of you and then always look for other challenging opportunities that will push you even harder.
The lack of skilled professionals and the lack of commitment. If you're gonna commit to a profession and a career in the food business you have to understand that it is not a Monday through Friday 9-to-5 job. You have to understand the commitment it takes to fulfill what the profession desires. We're in the service business.
Ethics honesty and professionalism are most important to me.
